The winey, dark, rich character of this beer is reminiscent of sherry or port. Jubel is aged for 18 months in fresh fino sherry barrels with a little sherry in it. Notes of macadamia, dried fruit, mocha, tender acids and soft tannins.
The apple juice was slowly fermented and matured in old oak barrels into dry still cider, then spent 7 days in open vats macerating on fresh grape pomace. Bottled with addition of freshly pressed apple juice to start the secondary fermentation in bottles.
